Avocado, red lentil and curried chick peas salad

This salad contains of multiple small dishes combined into one. It can be varied in many different ways. So you can cook everything or just the parts that you love the most. I have made this salad many times and it is a little bit different every time :)

Ingredients
  1. About 10 leaves of baby spinach or other green leaves
  2. 1 tomato or several small cherry tomatoes
  3. 10 thin slices of cucumber
  4. A handful of alfalfa sprouts
  5. 2-3 sundried tomatoes from a can (optional)
  6. 3-4 bits of artichokes from a can (optional)
  7. A handful salted cashew nuts (optional)
  8. Honey melon (optional)
  9. Dried pieces of apple (optional)
Instructions
  1. Take a plate and spread the baby spinach on the bottom. Slice the tomato and cucumber and sprinkle over the spinach. Chop the sun-dried tomatoes and artichoke and place on top of salad. Take a handful of alfalfa sprouts and place on top of the salad.

Red Lentils

Ingredients
  1. 1 dl red lentils
  2. ½ cube vegetable stock
  3. 2 dl water
Instructions
  1. Take 1 dl red lentils, 2 dl water and ½ cube vegetable stock and add to a saucepan. Cook over low heat with the lid on for about 10 minutes. Please check so that it does not boil too heavily because then the water will boil away and the lenses will burn to the bottom. If the water disappears too quickly and the lenses doesn’t feel ready, just add a little more water. When they are ready they are quite soft and the water should be almost completely gone. Take a dab of the red lenses on top of the salad and save the rest for another day :)

Curried Chick Peas

Ingredients
  1. 1 can of chick peas
  2. 1 apple or 1 garlic clove
  3. 1 shallot
  4. 1-2 tsp curry
  5. 1 pinch of salt
  6. Rapeseed oil or other oil of choice for frying
Instructions
  1. Rinse the chickpeas, chop the onion finely and chop the apple into small cubes. Fry the onion (and garlic) in oil over medium heat for a few minutes until it starts to get a little soft. Then add the chickpeas (and apple) and sprinkle with curry powder and a little salt. Fry for a few minutes. When done, add as much as you want on top of the salad, maybe 1 dl is about right depending on hunger and save the rest for another day :)

Avocado and pea pesto

Ingredients
  1. 1 avocado
  2. 1 dl peas
  3. 1 clove of garlic
  4. 1 lemon wedge
  5. 1 pinch of salt
Instructions
  1. Rinse the chickpeas, chop the onion finely and chop the apple into small cubes. Fry the onion (and garlic) in oil over medium heat for a few minutes until it starts to get a little soft. Then add the chickpeas (and apple) and sprinkle with curry powder and a little salt. Fry for a few minutes.
