Gluten-free vegan buckwheat pancakes

I have been craving pancakes for a while now and my first attempt was a few weeks ago. It was far from a success. But shame on she who gives up :) This time they turned out really well instead, they even look like “normal” pancakes. Yum!

I started out with making some almond milk. “Mandelmjölk” in Swedish as it says on the bottle :)

4 dl homemade almond milk
2 dl water
3 dl buckwheat flour
4 TBSP potato flour
1-2 tsp agave syrup
1-2 TBSP almond butter
2 TBSP rapeseed oil
1/2 tsp salt

Pour the almond milk and water into a bowl. Then whisk in a little flour at a time until all flour is added. Whisk in agave syrup, almond butter, salt and rapeseed oil. Let the batter rest for a quarter or so. Then fry them one by one in rapeseed oil. I served the pancakes with some mango, kiwi, banana, pear and grated coconut.
